Smoked Pecan Cobbler
INGREDIENTS:
6 tbsp unsalted butter
2 cups pecans (chopped)
2 cup self rising flour
Pinch of salt
2 cup of light brown sugar
2 tsp vanilla extract
1 cup whole milk
2 cups warm water
INSTRUCTIONS:
1. Preheat the pellet smoker to 350°F (180°C.)
2. Place your butter into your baking dish and melt in the smoker with half of lightly crushed pecans.
3. Remove the baking dish from the oven and place onto a heat-proof surface.
4. In a bowl add flour, 1 cup of your brown sugar, salt, milk, and vanilla extract and whisk until well combined.
5. Using a large spoon, scoop dollops of batter out of the bowl and place them into your baking dish evenly spaced.
6. Next, in a separate bowl, combine the rest of your pecans and brown sugar and mix together.
7. Place handfuls evenly of the pecan/brown sugar mixture on top of the batter.
8. Heat 2 cups of water and slowly pour it over the entire baking dish making sure all has been covered.
9. Place in your preheated smoker for 45 minutes.
10. Remove from the oven and let cool for 15-30 minutes before serving with some vanilla ice cream.
