Charred cos lettuce hearts
Ingredients:
2 tbsp Lemon Juice
2 tbsp cup mayonnaise
1 tbsp Dijon mustard
1 tsp caster sugar
1/2 tsp salt
1/2 tsp crushed garlic
1/2 cup cooked chopped bacon
1/2 cup crumbled Parmesan
Cos Lettuce Hearts
Instructions:
1. The lemon dressing:
In a bowl combine well the lemon juice, mayonnaise, crushed garlic, salt and sugar, set aside in the fridge.
2. The bacon:
Slice and dice bacon and fry off till crispy and then allow to cool, this will be a topping at the end.
3. The lettuce hearts:
Slice the lettuce hearts in half and rinse out any dirty that may still be in there. Allow to drain.
4. The grill:
Getting you gas or charcoal grill piping hot is the key here, we essentially want to sear the lettuce. spray or brush olive oil on the cut side of the lettuce and sear for 30-60sec and remove from heat to cool.
5. Assembly and serve:
Once all ingredients have cooked simply place the lettuce grilled side up on a serving plate and layer with dressing, bacon and Parmesan cheese.
