Braised Beef Short Rib


Ingredients (serves 4)

Beef Short Ribs

2 cups Beef stock

1 Onion

1 carrot

2 celery stalks

3 cloves garlic

2 tbsp Worchestire sauce

2 tbsp Flour

2 tbsp Oil

to taste Salt 

to taste pepper

4 sprigs Thyme

1/4 bunch Oregano

 

  1. Smoke beef short rib for 2-3hrs with just salt and pepper, we are really just looking to get smoke flavour and bark happening.
  2. in a pot or dutch oven bring oil to a medium heat and saute chopped onion, carrot and celery
  3. add flour once veg has taken on some colour or softened. add flour and stir for 30sec followed by warm beef stock.
  4. add all remaining ingriedents including smoked beef ribs and cover with lid and place in oven or smoker at 140c for 2-3 hours till beef ribs are tender.
